How are these different/better than using a single-sided clipless pedal [where one side is clipless and the other side is a flat pedal]?
Single-sided clipless pedals attempt to solve the same problem but they have some significant drawbacks. When riding them with clipless shoes you have to hunt around to find the clipless side and that can often create challenges when starting up on hills or uneven off-road terrain. And when riding in flat shoes you also have to make sure the pedal is flat side up. The Mousetraps allow you to run dual-sided clipless which is much more ideal when riding with clipless shoes and you can still have the flat setup in seconds when you want to use casual shoes. You can even use 4 mousetrap adapters to get a fully flat pedal.
Are they going to break / are they 3D printed?
No. They are injection molded and made from glass-reinforced nylon. This is the same high-strength high-impact composite used in premium MTB pedals. We also tested the heck out of them to make sure they would not wear out and withstand everything that could get thrown at them. They are not designed (or recommended) for aggressive off-road riding but we still tested them for that and they performed great.
